Instructions:

2. Make the Easy Pastry Cream:

  1. In a small pot, heat milk until just starting to simmer.

  2. In a bowl, whisk sugar, egg yolks, and cornstarch until smooth.

  3. Slowly add the hot milk to the bowl while whisking.

  4. Pour everything back into the pot and cook over medium heat, whisking constantly, until it thickens (about 2-3 minutes).

  4. Let the batter rest while you heat the oil.

2. Heat the Oil:

  • Pour oil into your frying pan (about 2-3 inches deep).

  • Heat to 350°F (175°C). If you don’t have a thermometer, drop in a tiny bit of batter — it should sizzle and float up.

3. Fry the Rosettes:

  • 1 tsp sesame oil

  • 1 lb (450g) ground pork (with some fat, about 20%)

  • 2 tsp soy sauce

  • 1 tsp sugar

  • 1 tbsp Shaoxing wine (or dry sherry)

  • 1 tsp sesame oil

  • 1 tbsp ginger, minced

  • 2 green onions, finely chopped

  • 1/4 tsp white pepper

  • 1/2 tsp salt


Instructions:

1. Make the Soup Gel (Aspic):

  1. Heat the chicken stock until warm (but not boiling).

  2. Stir in soy sauce, sesame oil, and sprinkle the gelatin over the top. Stir until dissolved.

  3. Pour into a shallow dish and refrigerate until set (about 1 hour).

  4. Once set, cut into small cubes — these will melt into soup inside the dumplings!

2. Make the Dough:

  1. Place flour in a large bowl. Slowly pour in the hot water while stirring.

  2. Knead until a smooth dough forms (about 8 minutes). Cover and let rest for 30 minutes.

3. Prepare the Filling:

  1. In a bowl, combine ground pork, soy sauce, sugar, wine, sesame oil, ginger, green onion, white pepper, and salt.

  2. Mix well until sticky and combined.

  3. Gently fold in the soup gel cubes. Chill the filling until ready to use.

4. Shape the Dumplings:

  1. Divide the dough into small pieces (about 1-inch balls).

  2. Roll each piece into a thin circle (about 3 inches wide).

  3. Place 1 tablespoon of filling in the center.

  4. Pleat and pinch the edges together at the top to seal — aim for 12-14 folds for the classic look.

5. Steam the Dumplings:

  1. Line a bamboo steamer with parchment paper (poke holes for steam).

  2. Place dumplings inside, leaving space between them.

  3. Steam over boiling water for 8-10 minutes until cooked through.


How to Eat:

  • Gently lift the dumpling with chopsticks onto a spoon.

  • Bite a small hole, sip the hot soup inside, then enjoy the rest with a dip in black vinegar and ginger!
