Easy French Fruit Tart (Beginner-Friendly)

Ingredients:
For the Crust (Shortcut):
1 store-bought tart shell or pie crust (9-inch)
For the Filling:
1 cup (240ml) milk
3 tbsp sugar
1 tsp vanilla extract
2 egg yolks
2 tbsp cornstarch
1 tbsp butter
For the Topping:
2 cups fresh fruit (strawberries, blueberries, kiwi, grapes, etc.)
2 tbsp apricot jam (or honey)
1 tbsp water
Instructions:
1. Prepare the Crust:
If using a store-bought tart shell, bake according to package instructions and let it cool. If using a pie crust, press it into a tart pan and bake at 375°F (190°C) until golden (about 15 minutes). Cool completely.
2. Make the Easy Pastry Cream:
In a small pot, heat milk until just starting to simmer.
In a bowl, whisk sugar, egg yolks, and cornstarch until smooth.
Slowly add the hot milk to the bowl while whisking.
Pour everything back into the pot and cook over medium heat, whisking constantly, until it thickens (about 2-3 minutes).
Remove from heat, stir in butter and vanilla.
Let cool slightly, then spread into the tart shell. Chill for 30 minutes.
3. Add the Fruit Topping:
Arrange your fresh fruits in a pretty pattern on top of the chilled cream.
4. Glaze for Shine:
Warm the apricot jam and water in the microwave for 20 seconds. Brush over the fruit to give it a beautiful shine.
Swedish Rosettes (Wafflette Style)

Ingredients:
2 large eggs
2 tablespoons sugar
1 cup (240ml) milk
1 cup (125g) all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract (optional)
Vegetable oil (for frying)
Powdered sugar (for dusting)
Instructions:
1. Make the Batter:
In a bowl, whisk the eggs and sugar until light.
Add in the milk and vanilla extract.
Gradually whisk in the flour and salt until smooth. The batter should be thin, like pancake batter.
Let the batter rest while you heat the oil.
2. Heat the Oil:
Pour oil into your frying pan (about 2-3 inches deep).
Heat to 350°F (175°C). If you don’t have a thermometer, drop in a tiny bit of batter — it should sizzle and float up.
3. Fry the Rosettes:
Attach your rosette iron to the handle and place it in the hot oil for about 1-2 minutes to heat up.
Lift the hot iron, quickly dip it into the batter (do not submerge the top edge or the rosette won’t release!), then place it back into the oil.
Fry until golden and crisp, about 30-60 seconds.
Use tongs to gently shake the rosette off the iron. If it sticks, help it along with a fork.
Fry until both sides are golden, then transfer to paper towels to drain.
4. Dust and Serve:
Once cool, dust generously with powdered sugar. Serve and enjoy!
Tips:
Keep the iron hot — dip it in oil between each rosette.
If your rosette won’t release, make sure you’re not dipping the iron too deep into the batter.
You can sprinkle with cinnamon sugar or drizzle with chocolate for a twist!

Ingredients:
For the Dough:
2 1/2 cups (320g) all-purpose flour
3/4 cup (180ml) hot water
For the Soup Gel (Aspic):
2 cups (480ml) chicken stock (rich and gelatinous)
1 packet (1 tbsp) unflavored gelatin
1 tbsp soy sauce
1 tsp sesame oil
For the Filling:
1 lb (450g) ground pork (with some fat, about 20%)
2 tsp soy sauce
1 tsp sugar
1 tbsp Shaoxing wine (or dry sherry)
1 tsp sesame oil
1 tbsp ginger, minced
2 green onions, finely chopped
1/4 tsp white pepper
1/2 tsp salt
Instructions:
1. Make the Soup Gel (Aspic):
Heat the chicken stock until warm (but not boiling).
Stir in soy sauce, sesame oil, and sprinkle the gelatin over the top. Stir until dissolved.
Pour into a shallow dish and refrigerate until set (about 1 hour).
Once set, cut into small cubes — these will melt into soup inside the dumplings!
2. Make the Dough:
Place flour in a large bowl. Slowly pour in the hot water while stirring.
Knead until a smooth dough forms (about 8 minutes). Cover and let rest for 30 minutes.
3. Prepare the Filling:
In a bowl, combine ground pork, soy sauce, sugar, wine, sesame oil, ginger, green onion, white pepper, and salt.
Mix well until sticky and combined.
Gently fold in the soup gel cubes. Chill the filling until ready to use.
4. Shape the Dumplings:
Divide the dough into small pieces (about 1-inch balls).
Roll each piece into a thin circle (about 3 inches wide).
Place 1 tablespoon of filling in the center.
Pleat and pinch the edges together at the top to seal — aim for 12-14 folds for the classic look.
5. Steam the Dumplings:
Line a bamboo steamer with parchment paper (poke holes for steam).
Place dumplings inside, leaving space between them.
Steam over boiling water for 8-10 minutes until cooked through.
How to Eat:
Gently lift the dumpling with chopsticks onto a spoon.
Bite a small hole, sip the hot soup inside, then enjoy the rest with a dip in black vinegar and ginger!
Tips:
Make sure your soup gel is solid before mixing — it’s the secret to getting the soup inside.
Don’t overfill the wrappers or they might burst while steaming.
You can freeze uncooked dumplings for later — steam directly from frozen!
